Instructions
- Place duck in a pot together with ginger, celery, salt, and water. Boil over medium fire, then, reduce heat to low and simmer for an hour and a half until the meat is tender.
- Remove duck from the pot and set aside in a wire rack to cool a little and drain excess moisture.
- Pat dry in paper towels before frying.
- When duck is ready, heat oil in a deep fryer.
- Gently put the duck and fry until crispy and golden brown.
- To make the sauce, simply heat vinegar, chilies, sugar, and salt in a pan on low fire.
- Dissolve cornstarch in water and pour mixture into the pan. Stir continuously to blend. When the sauce thickens, turn off heat.
- Serve freshly fried duck with prepared sauce.
