Angono’s Fried Itik

Higantes Festival of Angono, Rizal (November 23). This is a fiesta celebrated in honor of Saint Clement, the patron saint of the town of Angono. To celebrate it in a unique way, the locals used the Mexican art form Higantes, which are made of paper-mache. The 12 feet high and about 5 feet in diameter images are paraded on the streets to impress everyone.

  • Place duck in a pot together with ginger, celery, salt, and water. Boil over medium fire, then, reduce heat to low and simmer for an hour and a half until the meat is tender.
  • Remove duck from the pot and set aside in a wire rack to cool a little and drain excess moisture.
  • Pat dry in paper towels before frying.
  • When duck is ready, heat oil in a deep fryer.
  • Gently put the duck and fry until crispy and golden brown.
  • To make the sauce, simply heat vinegar, chilies, sugar, and salt in a pan on low fire.
  • Dissolve cornstarch in water and pour mixture into the pan. Stir continuously to blend. When the sauce thickens, turn off heat.
  • Serve freshly fried duck with prepared sauce.
