Ingredients:

Instructions:

  • In a microwave-safe bowl, combine the honey and peanut butter. Heat the mixture in the microwave for about 1-2 minutes, or until it’s easy to stir and fully combined. Make sure to pause and stir every 30 seconds to prevent it from boiling over.
  • Stir in the vanilla extract and a pinch of salt to the honey and peanut butter mixture. The salt enhances the flavor of the bars and complements the sweetness.
  • In a separate microwave-safe bowl, place the chocolate chips and heat them in the microwave for 30 seconds at a time, stirring in between, until they are melted and smooth.
  • Mix the melted chocolate into the honey and peanut butter mixture. Stir well to create a smooth, chocolate-infused base for your granola bars.
  • Now, add the old-fashioned oats and chopped walnuts to the mixture. Stir until all the dry ingredients are thoroughly coated with the chocolate and peanut butter mixture.
  • Line a microwave-safe dish or baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  • Transfer the granola mixture into the prepared dish, using a spatula to press it down firmly and evenly.
  • Place the dish in the microwave and heat on high for about 3-4 minutes. Cooking times may vary depending on your microwave’s wattage, so keep a close eye to ensure it doesn’t overcook. The mixture should set and the edges will start to turn golden.
  • Once done, remove the dish from the microwave and let it cool and firm up for about 20-30 minutes.
  • Once the mixture has fully set, use the parchment paper overhang to lift the slab of granola out of the dish. Place it on a cutting board and cut it into bars of your desired size.
  • Your microwave-made Chocolate Chip Walnut Granola Bars are ready to enjoy. Store them in an airtight container for future snacking or grab one right away.

Cooking Tips

  • Even Mixture Distribution: When combining the oats, walnuts, and chocolate chips with the wet ingredients, make sure everything is evenly distributed. This ensures a uniform taste and texture in every bite.
  • Use Quality Chocolate: Opt for high-quality chocolate chips or chunks. The better the chocolate, the richer the flavor of your granola bars.
  • Line the Dish: Always line your dish with parchment paper. It not only prevents the bars from sticking but also makes them easy to lift and cut into even pieces.
  • Press Firmly: When transferring the mixture into the dish, press it down firmly and evenly. A gentle yet firm press ensures the bars hold their shape.
  • Watch Closely in the Microwave: If you’re using the microwave, keep a close eye during the heating phase. Cooking times may vary, and you don’t want to overcook and end up with hard bars.
  • Overcooking: Overcooking in the microwave can result in dry, hard granola bars. Make sure to watch the cooking process closely.
  • Not Mixing Thoroughly: Failing to mix the wet and dry ingredients evenly can lead to uneven bars with flavor variations.
  • Using Stale Ingredients: Freshness matters. Ensure your ingredients, especially the oats and nuts, are not past their prime.
