Ingredients

  • 1 pound octopus, cleaned
  • 2 1/2 tablespoons gochujang
  • 1 1/2 tablespoons gochugaru
  • 1 tablespoon low-sodium soy sauce
  • 1 1/2 tablespoons toasted sesame oil
  • 1 tablespoon sesame seeds
  • 2 sesame seeds minced garlic
  • 1/2 sweet onion, sliced
  • 2 scallions, cut into 1-inch pieces
  • 1/2 medium carrot, thinly sliced
  • 2 green chiles, like jalapeño, seeded and thinly sliced

Instructions

  • Cut the octopus legs into 2-inch pieces and quarter the head. Rinse and dry.
  • In a large bowl, mix together the gochujang, gochugaru, soy sauce, sesame oil, sesame seeds, and garlic to make the sauce.
  • Add the octopus to the sauce and mix to combine. Let marinate for 10 to 15 minutes.
  • In a large skillet or stir-fry pan over medium-high heat, cook the octopus, onion, scallions, carrot, and chiles until the octopus changes color and is cooked through, 7 to 10 minutes. Make sure not to overcook it.
