Notes

While cooking rice, you should make sure that the oil is piping hot and the rice is covered. If the rice starts sticking to the pan, use a large spoon to stir the rice constantly. If you don't stir the rice enough, it won't cook evenly. If you add too much water, you'll end up with sticky, overcooked rice. You can also use less water if you want your fried food to cook faster.

Alternative Method: Oven-Baked Mandarin Style Fried Rice

Mandarin Style Fried Rice
Fresh ingredients are the heart of every great dish. Here’s how to prep for your fried rice masterpiece.

Preparation Time: 40 minutes | Serves: 4

Ingredients:

  • 2 cups of jasmine rice
  • 4 cups of water
  • 2 tablespoons of vegetable oil
  • 1 cup of cooked chicken, diced
  • 1 cup of cooked shrimp
  • 1 cup of mixed vegetables (peas, carrots, corn)
  • 2 cloves of garlic, minced
  • 2 eggs, beaten
  • 1/4 cup of soy sauce
  • 2 tablespoons of oyster sauce
  • 1 teaspoon of sesame oil
  • 1/2 teaspoon of ground white pepper
  • Green onions, chopped, for garnish

Instructions:

  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Cook the Rice: In a large saucepan, bring 4 cups of water to a boil. Stir in the jasmine rice, reduce the heat to low, cover, and let it simmer for 15-20 minutes or until the rice is tender and the water is absorbed.
  • Sauté Vegetables and Meat: In a large, oven-safe skillet or casserole dish, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, stir in the cooked chicken, shrimp, and mixed vegetables. Sauté for another 3-4 minutes until the vegetables are tender.
  • Scramble the Eggs: Push the sautéed ingredients to one side of the skillet and pour the beaten eggs into the other side. Stir gently to scramble the eggs until they are just cooked but still slightly runny.
  • Combine and Season: Mix the scrambled eggs with the rest of the ingredients in the skillet. Add the cooked jasmine rice and stir well to combine. Pour the soy sauce, oyster sauce, and sesame oil over the rice mixture. Sprinkle with ground white pepper. Stir everything together until well combined.
  • Bake in the Oven: Place the skillet or casserole dish in the preheated oven. Bake for 15-20 minutes or until the fried rice is heated through, and the flavors meld together beautifully.
  • Garnish and Serve: Once out of the oven, garnish your baked Mandarin Style Fried Rice with chopped green onions for a burst of fresh flavor. Serve hot and enjoy your delightful creation!

Tips for making Mandarin Style Fried Rice

Mandarin Style Fried Rice
Garnish, garnish, garnish! Watch your fried rice go from ordinary to extraordinary.

Cooking Tips

  • Use Day-Old Rice: For the best texture, use leftover rice that has been in the refrigerator for a day. This helps prevent clumping and ensures each grain is perfectly separated.
  • High Heat is Key: When stir-frying, make sure your skillet or wok is hot. High heat helps in creating that smoky, authentic flavor.
  • Prep Ingredients in Advance: Mandarin Style Fried Rice cooks quickly, so have all your ingredients chopped and ready before you start cooking.
  • Don’t Overload the Skillet: If you’re making a large batch, cook the rice in smaller portions to avoid overcrowding the skillet. Overcrowding can lead to uneven cooking.
  • Season Thoughtfully: Be mindful of the salt content in soy sauce and oyster sauce. Taste as you go and adjust the seasoning to your preference.
