  • 1 head of pak choi ends removed
  • 2 Tablespoons water

Instructions

  • In a skillet set over medium heat, add in the vegetable oil and mushroom quarters. Cook for 5 minutes or until soft.
  • In a bowl, add in the honey, rice vinegar, soy sauce, minced ginger, minced garlic and dash of black pepper.
  • Whisk until mixed. Pour over the mushrooms. Continue to cook for 5 minutes or until reduced.
  • In a frying pan set over medium heat, add in the pak choi.
  • Add in 3 tablespoons of water. Cook for 5 minutes or until cooked. Add in the cooked white rice, eggs and soy sauce.
  • Cook for an additional minute or until the eggs are set.
  • Remove from heat.
  • Serve the fried rice with the mushrooms and pak choi.
  • Garnish with the sesame seeds and sliced spring onion.

Notes
