This is Kelly Atkinson from Food And Meal. I’m so excited to share with you my latest obsession – cheese ramen! I know it sounds a little weird, but trust me when I say that the combination of melted cheese and ramen noodles is simply divine.
I first tried cheese ramen at a little hole-in-the-wall restaurant near my apartment, and I was completely blown away by how creamy and flavorful it was. The sharp cheddar blended perfectly with the salty broth, creating an umami explosion in my mouth. I just had to try recreating it at home!
After some trial and error, I’ve come up with my own recipe for cheesy ramen that I can’t get enough of. The secret is adding the cheese at the very end, so it melts just enough while retaining that satisfying stretchy texture. I like to use a blend of mozzarella and cheddar to get the best of both worlds – creaminess and flavor!
What I love most about this recipe is how customizable it is. You can play around with different cheeses, spices, vegetables or proteins to create your own personalized cheesy ramen. It’s the ultimate cozy, comforting meal that also happens to be quick, easy and budget-friendly. I find myself craving this ramen all the time, and I think you will too once you give it a try.

Alternative Method: Cheese Ramen in the Oven
Preheat the oven to 375°F (190°C). Boil ramen noodles until slightly undercooked, drain, and set aside. In a saucepan, melt unsalted butter, stir in flour, and gradually whisk in milk until smooth. Add shredded cheese and Parmesan, stir until melted, and season with salt and pepper. Combine noodles with cheese sauce, transfer to a baking dish, and bake for 15-20 minutes until golden and bubbly. Garnish with green onions, bacon bits, or a poached egg. Serve hot and enjoy the creamy, cheesy goodness.
Cooking Tips
First up – have fun with the cheese! I love experimenting with different melty cheese varieties like cheddar, gouda and havarti. Lately I’ve been blending a few cheeses together to get the ultimate flavor and texture. Aim for a stretchy, gooey cheese that will coat each noodle in decadence. Just take care not to overdo it on the cheese or things can get a bit gloopy!
Patience is key when incorporating the cheese so it melts thoroughly without clumping. I add small handfuls at a time, allowing the heat of the broth to gently melt it before adding more. Stir continuously to distribute the cheese evenly. Going slowly prevents the cheese from seizing up into oily blobs.
And while we all love a nice gooey cheese pull, be careful not to boil your broth for too long once the cheese is added. Too much heat can make the fats separate out, resulting in an unappetizing oil slick on top. Gently simmer until the cheese is just melted through.
Amp up the flavor by adding aromatics like garlic, onion and herbs. I especially love stirring in a bit of sharp cheddar and hits of fresh chives.
