  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1/2 small sweet onion, chopped
  • 1 tablespoon butter, at room temperature

For the Sriracha mayo

  • 3 tablespoons mayonnaise
  • 1 1/2 tablespoons Sriracha sauce
  • 1 scallion, chopped, for serving
  • 1/2 cup shredded mozzarella or Cheddar cheese, for serving

Instructions

TO MAKE THE FRIES

  • Preheat the oven to 450°F.
  • Line two baking sheets with aluminum foil.
  • To make the fries, in a large bowl, toss the potatoes with the olive oil and a few good shakes of salt and pepper.
  • Lay out the potatoes in a single even layer on the prepared baking sheets, dividing them equally.
  • Bake for 30 to 35 minutes, tossing once to ensure even baking.

TO MAKE THE KIMCHI TOPPING

  • While the fries are baking, in a medium bowl, combine the kimchi with the soy sauce, sugar, onion, and butter.
  • Heat a medium skillet over medium heat. Add the kimchi and cook until nicely browned, 4 to 5 minutes.

TO MAKE THE SRIRACHA MAYO

  • In a small bowl, whisk the mayonnaise and Sriracha together.
  • To serve, arrange the fries on a serving dish and top them with the sautéed kimchi.
