- 4 Ounces Green Onions Fresh, Trimmed and Cut into Small Sized Strips
- 1 Cup Wine Rice Variety
- 2 teaspoons Chile Sauce Vietnamese Variety
- 1 Pound Shrimp Cleaned, Tails Removed and Large in Size
- Dash of Salt and Black Pepper For Taste
- ½ Cup Flour All Purpose Variety
- ¼ Teaspoon Oil Sesame Variety
Ingredients for Your Double Blanched Garlic:
- 3 Heads of Garlic
- Dash of Salt For Taste

- The first thing that you will want to do is make your double blanched garlic. To do this prepare an ice bath and then separate your garlic into cloves. Remove the ends of the cloves using a knife.
- Then fill up a small sized saucepan with some water. Season with a dash of salt and set over medium heat. Bring this to a boil and add in your cloves of garlic. Blanch for the next 30 seconds before removing and dunking into your ice bath immediately. Drain and pat dry with a paper towels. Peel your cloves and slice thinly.
- Next bring a large sized stockpot over medium heat. Fill up with water and bring this water to a boil. Then set a large sized wok over medium heat and add in a generous amount of peanut oil.
- In your wok once the oil is hot enough add in your garlic. Cook for the next 2 to 3 minutes before adding in your white sugar. Continue to cook for another 1 to 2 minutes or until your garlic begins to caramelize.
- Add in your rice wine, vinegar and favorite kind of soy sauce and deglaze your pan. Add in your fresh carrots, haricot verts and your green onions. Stir thoroughly to combine before adding in your chili sauce. Continue to cook until reduced by at least half.
- Meanwhile add a dash of salt to your boiling water. Once your water is boiling add in your noodles and cook until tender to the touch. Once tender drain your noodles thoroughly before adding them into your sauce. Toss thoroughly to coat thoroughly.
- Season your shrimp with a dash of salt and pepper. Toss in your flour until thoroughly coated on all sides. Add into a skillet with some oil set over high heat. Saute for the next 1 to 2 minutes or until golden in color. Remove and drain on a plate lined with some paper towels.
- Serve your noodles with your sauce. Top off with your veggies and your shrimp. Garnish with some green onions and a drizzle of your sesame oil. Serve right away and enjoy.
