Watermelon Soju Cocktail Recipe
KOREAN WATERMELON SOJU COCKTAIL
Equipment
Ingredients
- 1 medium-size seedless watermelon
- 1 bottle soju (750 milliliters)
- 2 cups lemon-lime soda, like Sprite or 7-Up
- Juice of 1⁄2 lemon
- 2 cups ice
Instructions
- Carefully cut a thin piece of watermelon off the bottom of the watermelon so that it is stable and doesn’t wobble. Cut the top off the watermelon, about a quarter of the way down from the top. With a large metal spoon or ladle, scoop out the inside of the watermelon into a large bowl. Use a knife to roughly chop the watermelon flesh in the bowl. Use a potato masher to liquefy most of the watermelon flesh. Remove any fibrous pieces.
- Add the soju, lemon-lime soda, and lemon juice to the watermelon flesh and stir to mix, continuing to mash and liquefy.
- When most of the watermelon has broken down, add the watermelon liquid back into the watermelon shell (or into a pitcher if you’d rather pour it).
- To serve, fill a glass with ice and ladle from the watermelon, or pour the watermelon soju cocktail from the pitcher over the ice.

Alternative Method: Making Watermelon Soju Cocktail with a Blender
To kickstart the process, I carefully carve a ripe watermelon into juicy, seedless chunks, ensuring each piece carries the promise of sweetness. The rhythmic hum of the blender comes next, transforming the watermelon chunks into a velvety puree that’s nothing short of a feast for the senses.
The symphony continues as soju, with its subtle potency, and freshly squeezed lime juice join the party. It’s all about finding that perfect balance between the spirited kick of soju and the zesty brightness of lime. A touch of simple syrup adds just the right amount of sweetness, creating a harmonious blend that dances on the taste buds.
As the ice cubes twirl into the mix, the blender whirls once more, transforming the concoction into a frothy, icy elixir. The anticipation builds as I pour the vibrant Watermelon Soju Cocktail into glasses, opting for charming mason jars to elevate the experience. A final flourish – a lime wedge and a small watermelon slice perched on the rim – turns each glass into a work of art.

Cooking Tips
I was so excited to try making watermelon soju cocktails this summer! As a fan of both watermelon and Korean soju, I had a feeling combining them would be refreshing and delicious.
The sweet juice of fresh watermelon pairs perfectly with the subtle sweetness of soju. I really enjoy the interplay between the fruity and floral flavors. Blending the watermelon tones down the alcohol bite too, making for a smooth, easy-to-drink cocktail.
Based on my positive experience, I definitely recommend trying out this combo! My tips are to use very ripe watermelon for maximum sweetness. I also think garnishing the drinks with a watermelon wedge or mint sprig looks lovely.
When mixing, start with 2 parts watermelon juice to 1 part soju. Adjust to taste if you prefer more or less booze. And be sure to chill both the watermelon juice and soju before mixing for optimal refreshment.
