Carefully cut a thin piece of watermelon off the bottom of the watermelon so that it is stable and doesn’t wobble. Cut the top off the watermelon, about a quarter of the way down from the top. With a large metal spoon or ladle, scoop out the inside of the watermelon into a large bowl. Use a knife to roughly chop the watermelon flesh in the bowl. Use a potato masher to liquefy most of the watermelon flesh. Remove any fibrous pieces.
Add the soju, lemon-lime soda, and lemon juice to the watermelon flesh and stir to mix, continuing to mash and liquefy.
When most of the watermelon has broken down, add the watermelon liquid back into the watermelon shell (or into a pitcher if you’d rather pour it).
To serve, fill a glass with ice and ladle from the watermelon, or pour the watermelon soju cocktail from the pitcher over the ice.
