Ingredients

  • 3 Cups garbanzo beans
  • 1 Cups applesauce unsweetened
  • 5 tbsp vanilla extract
  • 2 tbsp butter flavor natural
  • 12 tbsp liquid stevia extract
  • 1 cup oat flour
  • Cup powdered erythritol
  • tbsp salt
  • Cup coconut butter raw and melted
  • Cup dark chocolate chips no sugar added

Instructions

  • Line an eight by eight-inch brown pan with parchment paper.
  • Drain the beans and use water to rinse them as much as you can.
  • Add the beans, unsweetened applesauce, vanilla, butter flavor and stevia in a blender and blend until smooth.
  • Add flour, erythritol and salt then blend until smooth.
  • Add the butter and blend once more scrapping the sides of your blender.
  • Stir in the chocolate chips then spread the mixture in the prepared pan. Cover with a plastic wrap and refrigerate for an hour and a half.
  • Transfer the fudge from the pan to a platter and slice. Serve and enjoy.

Notes

The cookie dough fudge recipe starts with an edible cookie dough recipe. The fudge does not contain milk and is made with sweetened condensed milk instead. It does not require a candy thermometer, but does need a microwave. If you want to freeze some for later use, you can freeze it in a freezer-safe container. This fudge is perfect for holidays. You can also store it for a few months afterward.
