Scampi lemon skewers

The inspiration struck me one sunny afternoon while sipping iced tea on my patio. I caught a whiff of my neighbor grilling shrimp next door, and my mind wandered to the realm of possibilities. I began daydreaming about the flavors of garlic, lemon, butter mixing with the sweet briny taste of shrimp fresh off the grill. I could almost taste the charred edges contrasting the plump juicy shrimp in the center. My mouth was watering from the vision dancing in my imagination!

Instructions

  • Soak the skewers in water.
  • Wash the tomatoes and remove the stalk, chop with the parsley.
  • Peel and chop the onion, mix with the vinegar, oil, salt, pepper, tomatoes and basil.
  • Peel and finely chop the garlic, add to the mayonnaise. Mix with salt, pepper and curry.
  • Turn on the contact grill.
  • Peel the vegetable onion and cut into wedges. Cut the lemon into wedges. Layer both on the skewers with the prawns.
  • Cook the skewers on the contact grill for 10 minutes and serve with the salad.
