Camiguin’s Sorol

Lanzones Festival of Camiguin (3rd week in October). Lanzones is a grape- sized fruit, which is the main source of livelihood in the island of Camiguin. Everybody knows how lanzones could not be a sweet if it weren’t from this island so it is but right that the locals celebrate their unique blessing through fun activities. There are lots of street dancing, beauty pageants, cultural competitions, and parades.

Ingredients

  • 1 whole native chicken about 2 1/2 lbs., cut into small serving pieces
  • 2 lemongrass bulbs sliced thinly
  • 1 tbsp ginger sliced
  • 1 pc onion sliced
  • 2 pcs tomatoes seeded and quartered
  • 2 cups coconut milk
  • 1 cup coconut cream
  • Pinch of salt

Instructions

  • Place chicken in a pot together with lemongrass, ginger, and onions. Put enough water to cover meat and boil over medium heat until tender.
  • When chicken is tender, remove the bones from the meat, then, place the meat back into the pot, discarding the bones.
  • Whisk in coconut milk and some salt and bring to a boil again.
  • When the mixture is well blended, turn off heat, stir in coconut cream and tomatoes, and serve immediately.

Notes

Sorol is a native dish that Camiguin is proud of, apart of its sweet lanzones. It
is native chicken cooked in a special stew of creamy coconut milk, plus
lemongrass, ginger, and tomatoes. It’s a very simple dish but with a lot of
character, deserving the tag as a fiesta staple.
