Bacolod City Chicken Inasal

Masskara Festival of Bacolod City (October 19). The City of Smiles is visited by thousands of people who would like to experience the colorful dancing that happens on the street to culminate the week-long celebration of the Masskara Festival. Masskara literally means “a mass of faces”. Those faces had to be smiling faces, which is meant to project the resilience of the Filipino people, who can smile their troubles.

Ingredients

  • 1 whole chicken about 3 lbs., cut into 6 serving pieces
  • 3 stalks lemon grass julienned
  • 1 head garlic crushed
  • 2 tbsp ginger
  • 1/3 cup native coconut vinegar
  • 1/2 cup calamansi extract
  • 1 tbsp brown sugar
  • Salt and ground pepper to taste
  • For Basting Sauce:
  • 1/2 cup butter
  • 1/4 cup annatto oil

Instructions

  • Combine all the marinade ingredients in a bowl, then, toss is chicken making sure that the meat is coated well with the marinade mix. Set aside in the refrigerator to chill for half an hour. Do not leave the marinade on for log hours because the vinegar in the marinade could break down the enzymes of meat.
  • While the chicken is marinating, prepare the basting sauce by heating butter and annatto oil in a pan on low. Season with salt and pepper and stir frequently until well blended. Set aside.
  • When the meat is ready, start cutting slits on the bony parts to cook it through, then, skewer them into barbecue sticks.
  • Grill chicken skin side down first, until meat is cooked through. Turn the meat once or twice, basting generously, to cook it evenly and with lots of flavors.
  • Serve with steamed white rice and your favorite dip.
