  • In a small saucepan, mix together the soy sauce, brown sugar, water, mirin, and scallion and heat up over high heat, stirring occasionally. When the mixture comes to a rolling boil, remove the scallion (save for another use) and reduce the heat to medium.
  • Add the eggs to the soy sauce mixture and simmer gently for about 10 minutes. The sauce will reduce somewhat. Roll them around in the sauce with a wooden spoon while they simmer.
  • Transfer the eggs from the pan with slotted spoon to a shallow bowl, and let cool until cool enough to handle.
  • Carefully slice the eggs in half.
  • Store covered in the refrigerator for up to 3 days, before packing in lunch boxes.
