In a small saucepan, mix together the soy sauce, brown sugar, water, mirin, and scallion and heat up over high heat, stirring occasionally. When the mixture comes to a rolling boil, remove the scallion (save for another use) and reduce the heat to medium.
Add the eggs to the soy sauce mixture and simmer gently for about 10 minutes. The sauce will reduce somewhat. Roll them around in the sauce with a wooden spoon while they simmer.
Transfer the eggs from the pan with slotted spoon to a shallow bowl, and let cool until cool enough to handle.
Carefully slice the eggs in half.
Store covered in the refrigerator for up to 3 days, before packing in lunch boxes.
