Ingredients

  • 3 eggs
  • 1/2 small onion, finely chopped
  • 1/2 carrot, finely chopped
  • 1 teaspoon salt
  • 1 sheet dried Korean roasted laver seaweed

Instructions

  • In a medium bowl, whisk the eggs with the onion, carrot, and salt until well combined.
  • Heat a medium nonstick skillet over low heat. Add the egg mixture and heat slowly for 2 to 3 minutes, until almost cooked through, then place the seaweed sheet on top of the omelet. Roll the omelet into a tight roll by lifting one side with a flat wooden spatula. Turn the rolled omelet over and cook for an additional 1 to 2 minutes to make sure it is cooked through. Transfer to serving plate and let cool for a few minutes.
  • To serve, cut crosswise into 1-inch pieces and lay in cross-sections, like sushi rolls.
