  • 1 tablespoon butter, at room temperature, plus more for the baking dish
  • 2 ears fresh sweet corn kernels or 21⁄2 cups frozen sweet corn kernels, thawed and drained
  • 1/3 cup mayonnaise
  • 10 ounces mozzarella cheese, shredded
  • 1 tablespoon Sugar
  • Salt
  • Freshly ground black pepper
  • 1 scallion, chopped, for garnish (optional)

Instructions

  • Preheat the oven to 400°F.
  • Butter an 8-inch baking dish or loaf pan.
  • In a medium bowl, mix all the ingredients together well except the scallion, if using. Season with salt and pepper. Pour the mixture into the prepared baking dish.
  • Bake for 10 to 15 minutes, until the cheese is melted and the mixture is bubbling.
  • Serve immediately, garnished with chopped scallion (if using).
