In a medium bowl, mix all the ingredients together well except the scallion, if using. Season with salt and pepper. Pour the mixture into the prepared baking dish.
Bake for 10 to 15 minutes, until the cheese is melted and the mixture is bubbling.
Serve immediately, garnished with chopped scallion (if using).
