  • Preheat oven to 350F.
  • Line a cookie sheet with parchment paper.
  • Place the rolled oats, pecans, and cranberries in a mixing bowl.
  • Bring the honey and butter to a boil in a saucepan. Once boiling, remove from heat source and mix in the vanilla extract.
  • Pour honey onto the rolled oats and mix till well combined.
  • Spread the granola mixture onto the prepared cookie sheet and bake 17-20 minutes or until golden brown. You can rotate the pan once to make sure the granola cooks evenly.
  • Let cool.

Notes

If you're vegan, you can also make the granola using nondairy milk. You can also pour it into a double boiler or pour it into a bowl perched over gently boiling water. Once combined, stir often and spread the mixture onto baking sheets. Bake for 20-30 minutes, until the mixture is golden. Let it cool, and then add dried cranberries if desired.
