Coconut Macaroons with Orange Zest

  • Preheat oven to 325 F and line 3 cookie sheets with parchment paper.
  • In a large bowl, beat the sugar, salt, and butter together with a large whisk. Add the orange zest.
  • Incorporate the eggs, one at a time until well blended.
  • Add the 6 cups of coconut and mix well.
  • Using a small ice cream scoop, shape macaroons and place on the prepared cookie sheet, about 1 1/2 inches apart.
  • Bake for 25-30 minutes, or until the tops are browned. Allow to cool on the baking sheets.
  • Once cooled, melt the chocolate in a microwave safe container.
  • Drizzle on the macaroons using a fork.
