  • Pound the chicken breasts until ¼ inch in thickness. Transfer into a Ziploc bag.
  • In a bowl, add in the teriyaki sauce and light brown sugar. Stir well until mixed. Pour half into the Ziploc bag.
  • Seal the bag and marinate for 4 to 5 hours.
  • Pour the remaining teriyaki sauce into 2 bowls.
  • Preheat an outdoor grill to medium or high heat. Add the chicken breasts and pineapple slices onto the grill. Brush with the teriyaki sauce. Grill for 8 minutes on each side or until cooked through.
  • Transfer the chicken and pineapple slices onto the hamburger buns.
  • Top off with the ham and Pepper jack cheese.
  • Serve.

Notes

The chicken should be cooked through and the skin should be crispy. The fat renders out from the skin, while the skin changes texture when it absorbs the teriyaki sauce. You can add an over-easy egg to the sandwich to give it a more flavorful and delicious taste. The fried egg can be served on the top bun to make it more substantial.
