Teriyaki Shrimp

This recipe is a great gluten-free recipe for shrimp. It only takes 15 minutes to prepare and can serve up to 6 people. To make the sauce, you can use any type of soy sauce. If you don't have any, you can substitute tamari. While soy sauce is gluten-free, low-sodium soy sauce doesn't tend to be. Try tamari instead of soy sauce.

  • Prepare the sauce. In a bowl, add in the cornstarch and water. Whisk until smooth in consistency. Add in the light brown sugar, honey, soy sauce, rice vinegar, minced garlic and minced ginger. Transfer into a saucepan set over low heat and stir well to mix. Cook for 1 minute. Remove from heat.
  • In a bowl, add in the shrimp. Pour ½ of the sauce over the top. Stir gently and set aside to marinate for 10 minutes.
  • In a skillet set over medium to high heat, add in the sesame oil. Add in the snap peas. Cook for 4 minutes or until soft.
  • Add in the shrimp and remaining sauce. Stir well to mix. Cook for 3 minutes or until cooked through. Remove from heat.
  • Serve immediately with a garnish of sesame seeds.

Notes

If you don't want to make the sauce ahead of time, you can simply make the marinade while your shrimp are cooking. This sauce will keep the shrimp moist and tender, and you can serve it over rice or vegetables for added flavor. As a bonus, it is also delicious served with cauliflower rice, or with any type of vegetable you like. This recipe is fast and healthy, and will be a hit with any crowd!
