Ingredients

  • 1 16-ounce bag frozen fruit like strawberries, peaches, mango, or pineapple
  • cup full-fat coconut milk

Instructions

  • Combine the frozen fruit and coconut milk in a food processor. Process until smooth, stopping as needed to scrape down the sides.
  • Serve immediately for a smooth, soft-serve-like consistency, or freeze in a sealed container for up to 3 months. If frozen, let thaw for about 15 minutes before serving to make it soft enough to scoop.

Notes

TIP: If you would like a sweeter “ice cream,” add 1 frozen ripe banana to the food processor before blending.
