Tofu Teriyaki

Tofu Teriyaki can be meal prepped for a week or more. It can be prepared ahead of time for lunch or dinner and is a great vegetarian option. You can even prepare the sauce ahead of time and keep it in the refrigerator for later use. You can use it as a topping for rice and vegetables. While it is great as a main dish, you can also serve it as an appetizer for friends or family members.

  • Dry the tofu by wrapping it in paper towels.
  • After drying the tofu, let it marinate in the teriyaki sauce for 10 minutes. Drain, saving the sauce for later.
  • Heat the oil in a non-stick pan over medium heat.
  • Fry the tofu slices until they are crispy and golden on all sides. Expect the oil to splatter because of moisture from the marinade.
  • Remove the fried tofu from the pan and drain it on paper towels.
  • Drain any oil from the pan, leaving only about 1 teaspoon.
  • Saute the shallots and half the chopped green onions. Cook until fragrant (about 2 minutes).
  • Add the teriyaki sauce and let it simmer.
  • Mix the ingredients for the slurry and add it to the pan, stirring the sauce continuously. Turn off the heat as soon as the sauce thickens.
  • Pour the sauce over the tofu and garnish with the remaining chopped green onion.
  • Serve with steamed rice.

Notes

Tofu should be pressed. It should then be stir-fried with vegetables until golden on both sides. Tofu should be well-cooked and not mushy. Then, coat it with the teriyaki sauce. Be sure to add some teriyaki sauce to avoid it from sticking to the pan. It's also good to use cornstarch to coat the tofu cubes in a pan.
