Veggie Casserole with cashew by Air Fryer

This veggie casserole with cashew will be ready in about an hour. For the vegan version, you can use almond or cashew milk. For a more authentic, traditional cheese sauce, you can use vegan cheese. It is usually a mixture of cashews and oats.
This recipe is a healthy alternative to cheese and dairy. The sauce is a vegan dish with a low calorie count and will appeal to any vegetarian or vegan family.

  • In your blender, mix cashews with onion powder, garlic powder, nutritional yeast, sage, salt and pepper and pulse really well.
  • Add oil to your air fryer's pan and preheat the machine to 370°f.
  • Arrange potatoes, pepper flakes, garlic, onion, salt, pepper and parsley in the pan,
  • Add cashews sauce, toss, cover and cook for 16 minutes
  • Divide between plates and serve for breakfast.
  • Enjoy!

This Veggie casserole is kid-friendly and healthy. It's an ideal meal for busy families or a family dinner. The cashews in the vegan cheese sauce should be melted and cooked for at least 15 minutes. Once cooked, it's time to remove the foil and remove the vegs.
