  • Mix the salt, pepper, sugar, chili pepper and garlic.
  • Wash the fish and pat dry.
  • Rub the fish with the seasoning mixture and let it steep for 4 hours, preferably in the refrigerator.
  • Turn on the contact grill.
  • Mix the butter with the lemon juice, lemon zest and vermouth. Brush the fish with some of the butter.
  • Place the halibut skin on the contact grill and cook for 5 minutes.
  • Spread the remaining butter on the fish and cook for another 5 minutes.
  • Serve the fish with the lemon wedges.
