General Santos City’s Pakfry

Tuna Festival of General Santos City (1st week in September). General Santos City is famous, not just for being the hometown of the Philippines’ boxing pride, Manny Pacquiao, but more so for its abundant supply of tuna fish. To celebrate their tuna blessings, the city holds an annual festival that features everything tuna, especially the delicious recipes one can make of this fresh catch from the sea.

Instructions

  • Place all the ingredients in a pot, except for oil. Boil over medium fire.
  • Reduce heat to low and simmer for about 30 minutes or until the tuna is tender.
  • Remove tuna tail from the sauce, reserving sauce, and set aside tuna to cool and drain.
  • Once ready, heat oil in a pan over medium fire.
  • Deep fry tuna tail until crispy and nicely brown.
  • Serve with reserved sauce on the side.

As the biggest source of the freshest tuna, it is no surprise that General Santos
City’s best dish is Pakfry. Made of tuna tail, this recipe calls for the fish to be
cooked twice to double its goodness. It is first cooked in vinegar, then, deep-
fried afterwards.
