Bohol’s Chicken Hinalang

Sandugo Festival of Tagbilaran City, Bohol (July 1-2). The Blood Compact that occurred between Datu Sikatuna and Miguel Lopez De Legazpi is a historic event that is still celebrated in Bohol today. The peace treaty is commemorated with street dancing events, traditional Filipino carnival, and a martial arts festival among many other activities.

Ingredients

  • 1 whole native chicken cut into serving pieces
  • 1 bundle lemongrass tied
  • 1 pc onion chopped
  • 1 tbsp ginger sliced
  • 3 pcs red chilies chopped
  • 4 cups coconut milk
  • 1/2 cup water
  • Salt to taste
  • 1/2 tsp whole peppercorns

Instructions

  • Place chicken pieces in a pot with lemon grass and enough water to cover. Boil over medium fire.
  • Stir in coconut milk until combined.
  • Add onions, ginger, garlic, and peppercorns.
  • Reduce heat to low and simmer for an hour until chicken is cooked through.
  • Add salt and chili peppers. Cook for 5 minutes more.
  • Serve with steaming white rice.

the province for a culinary adventure because you will never get short of
dishes to try. This Chicken Hinalang recipe is one of the best dishes that the
Boholanos can proudly offer, especially during a fiesta. It’s basically native
chicken cooked in a creamy and spicy stew.
