  • Combine quinoa, water, coconut oil, salt in an Instant Pot.
  • Lock lid in place and turn the valve to Sealing. Press the Pressure Cooker button and set the cook time for 5 minutes at High Pressure.
  • Open the Instant Pot to use natural pressure release. Stir in almond butter.
  • Divide quinoa mixture among 2 bowls. Top with banana, and drizzle with honey. Sprinkle with cinnamon, and serve immediately.

You can add dried fruit and nuts to your granola. Dried cranberries, apricots, and cherries are some of the options you might want to try. You can also add shredded coconut, peanut butter, and pumpkin spice. The granola will be sticky and crumbly and break up into large clusters.
