Instructions
Heat the vegetable oil in a deep skillet over medium-high heat. Add the beef and stir-fry for 3 to 4 minutes, adding a dash of salt and pepper.
Add the potatoes, carrot, and onions and stir-fry until the vegetables begin to soften, about 5 minutes.
Add 3 cups of water to the pot and bring to a boil. Reduce the heat to low and simmer for about 15 minutes.
Stir in the curry sauce mix and simmer gently for another 5 minutes. The sauce will continue to thicken even after you remove it from heat.
Serve hot, over rice, topped with a fried egg, if desired.
