Ingredients

  • 1 small Korean radish or 2 daikon radishes, cut into matchsticks
  • 2 teaspoons salt
  • 2 teaspoons gochugaru
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons sugar
  • 1/4 teaspoon minced peeled fresh ginger
  • 1 tablespoon sesame seeds
  • 1 tablespoon chopped scallion

Instructions

  • Put the radish in a medium bowl and mix with the salt. Let stand for 15 minutes. Drain and squeeze tightly in your hands to drain out any liquid.
  • In a large bowl, mix together the radish and gochugaru. Add the vinegar, sugar, ginger, sesame seeds, and scallion, and mix together gently to combine.
  • Serve immediately.

INGREDIENT TIP: You can also add carrot strips and/or red pepper strips to the finished dish for added texture and color.
COOKING TIP: If you don’t have time to salt the radish first, then you can skip this step, but the end result won’t be as crunchy.
