Ingredients

  • 2 cups chopped napa cabbage, cut into 1-inch cubes
  • 1/2 cup chopped scallions
  • 1/2 Asian pear, peeled and cut into cubes
  • 1/2 apple, cut into cubes
  • 1/4 carrot, cut into cubes
  • 3 garlic cloves, sliced
  • 2 tablespoons sea salt
  • 4 cups water
  • 2 tablespoons sugar

Instructions

  • In a large bowl, mix together the cabbage, scallions, pear, apple, carrot, and garlic. Add the salt and stir to mix well. Let the mixture sit at room temperature for 40 minutes.
  • Transfer the mixture to a extra large glass jar.
  • In a large glass measuring cup, combine the water and sugar and stir to dissolve. Pour the mixture into the jar, making sure to cover the mixture with liquid. Cover tightly and refrigerate for at least 48 hours before eating.
  • Store in the refrigerator for up to 1 month.

INGREDIENT TIP: You can omit the fruit for a simpler version, and you can also add green chiles to this kimchi for a little spice.
