Grilled Zucchini and Eggplant with Cilantro Vinaigrette

This recipe is great for summertime. You can use it as a side dish for your next barbecue, or you can use it to serve with pasta. The best thing about it is that it's dairy-free, low-carb, and Whole30 friendly. To make it even better, you can season it with different oils, vinegars, herbs, and spices. Once you have it seasoned, you can start grilling!

  • Heat an indoor or outdoor grill to medium-high.
  • Place the veggies on the grill and brush lightly with olive oil. Rotate vertically then horizontally to create uniform grill marks on both sides.
  • Grill until the vegetables are tender, about 5 minutes, depending on thickness.
  • For the vinaigrette, mix the first 7 ingredients together in a large bowl, and then gradually whisk in the olive oil. Before serving, dip the vegetables slices into the vinaigrette, shaking off excess and place on a large platter to serve.

Notes

It's important to select a medium-sized zucchini. This is around 8 ounces and is fairly easy to slice on a cutting board. After cutting the zucchini, take it off the ends and then slice thin slices from each side. Then, place the zucchini on a baking sheet and brush with the marinade. You can continue to grill the vegetables until they are tender. If you're looking for more protein, you can add the grilled zucchini into your BLT sandwich.
