Most people think that cakes are always made sweet. That’s why cakes are said to be made for those who have a sweet tooth along with chocolates. Aside from chocolates, we can also add a variety of fruits such as oranges and mangoes in order to make a simple cake look very appealing to our tastes. However, that’s not the case for Carrot Cakes.

 

Unlike our usual sweet cakes, Carrot Cakes are actually made of carrots which, as we all know, are a kind of vegetable. Along with fluffy and white cream cheese frosting, a carrot cake is a must-have snack for everyone who wants to taste a different kind of cake.

How to Make Your Own Homemade Carrot Cake

Ingredients

 

For Cake

  • 2 cups Carrots, coarsely grated
  • 1 ¼ cups All-Purpose Flour
  • 2 pcs. Eggs, large
  • 1 cup Light Brown Sugar
  • ½ cup Canola Oil
  • ¾ cup Full-fat Sour Cream
  • 3 tsps. Pure Vanilla extract
  • 2 ½ tsps. Ground Cinnamon
  • 1 tsp. Ground Ginger
  • ½ tsp. Ground Cloves
  • ½ tsp. Allspice
  • ½ tsp. Ground Nutmeg
  • 1 tsp. Baking Powder
  • ½ tsp. Baking Soda
  • ¼ tsp. Salt
  • ½ cup Walnuts, chopped

 

For Frosting

  • 8 oz Softened Cream Cheese
  • 2 tbsps. Softened Butter, Unsalted
  • 2 tbsps. Vanilla Extract
  • 2 cups Confectioner’s Sugar

 

Directions

  1. Peel and grate the carrots first then set aside. In a separate bowl, combine brown sugar, eggs, oil, vanilla, sour cream and spices. Mix until everything is well-blended. Add the all-purpose flour, baking powder, baking soda and some salt and mix again. The consistency must become semi-thick before adding the carrots and nuts.

 

  1. Pour the entire batter into the pan and bake the cake in oven heated at 350 degrees Fahrenheit. Bake it for at least 42 – 45 minutes until its top has become golden-brown. After that, allow it to cool for 20 minutes before removing it from the pan.

 

  1. Beat the cream cheese, vanilla and butter in a large bowl by using a hand-held electric mixer for 2 minutes until it becomes smooth. Reduce the mixer’s speed and add the confectioner’s sugar before putting it again in high setting and beating it for another 2 minutes. Use it and some nuts to decorate the carrot cake before serving.
